Whip up a hearty stovetop ham and potato hash with flavorful spices and sweet corn for a delicious meal using leftovers.
Ingredients:
  • 4 Yukon gold potatoes, cubed
  • 1 cup frozen corn
  • olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried marjoram
  • 0.25 teaspoon ground paprika
  • 2 cups cubed cooked spiral ham
Instructions:
  • In a microwave-safe bowl, combine potatoes and corn, covering them with water. Microwave on high for 5 minutes, stir, then microwave for an additional 5 minutes. Drain before serving.
  • 1. In a saucepan over medium heat, warm olive oil. Add garlic, potatoes, and corn, stirring to coat in the oil. Sprinkle in the garlic powder, salt, chili powder, oregano, marjoram, paprika, cinnamon, and black pepper. Cook until the potatoes are tender and golden, which should take about 10 minutes. Introduce the ham, cover, and heat through in about 5 to 10 minutes.
