Easy Indian-inspired baked samosas made with spiced potatoes and peas, wrapped in flaky pie crust for a healthier twist.
Ingredients:
  • 4 potatoes, peeled and cubed
  • 0.25 cup oil
  • 2 small onions, finely chopped
  • 3 tablespoons coriander seed
  • 1 tablespoon curry powder
  • 1 (1 inch) piece fresh ginger, grated
  • 1 teaspoon salt
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon cayenne pepper
  • 0.125 teaspoon ground cinnamon
  • 2 roma (plum) tomatoes, finely chopped
  • 0.5 cup frozen peas
  • 4 prepared pie crusts
  • 2 egg whites, beaten, or as needed
Instructions:
  • In a large pot, cook the potatoes in salted water until tender. Drain and transfer them to a bowl. Mash the potatoes coarsely and set aside.
  • Preheat your oven to 400°F (200°C) for the perfect baking temperature.
  • In a large skillet, heat oil over medium-high heat. Sauté onions, coriander seed, curry powder, ginger, salt, turmeric, cumin, allspice, cayenne pepper, and cinnamon until onions are lightly browned, about 5 minutes. Remove from heat and stir in tomatoes and peas. Mix into coarsely mashed potatoes until fully combined. Allow the filling to cool completely.
  • 1. Slice each pie crust into 8 even triangles. Place filling on the wider end of each triangle. Fold corners over the filling to make a triangular hat shape. Pinch the dough together to seal. Brush with beaten egg whites and place on baking sheets.
  • Bake in the hot oven until samosas turn a beautiful golden brown, approximately 15 minutes.
