Spiced potatoes and chickpeas

Elevate your meal with flavorful spiced potatoes and chickpeas.
Ingredients:
  • 1kg carisma potatoes, peeled, quartered
  • 57.50 gm vegetable oil
  • 1 1/2 tsp mustard seeds
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp chilli flakes
  • 400g can chickpeas, rinsed, drained
  • 2 naan breads
  • 250.00 ml Greek-style yoghurt
  • Coriander sprigs, to serve
Instructions:
  • Boil potatoes in a large saucepan until partially cooked, about 5 minutes. Drain thoroughly.
  • In a large frying pan over high heat, heat oil. Add mustard seeds and cook for 30 seconds. Stir in ground coriander, turmeric, and chili and cook for another 30 seconds until fragrant. Add potato and cook for 4-5 minutes until golden and crisp, stirring occasionally. Finally, mix in the chickpeas and cook for 1 minute to warm through.
  • Follow package instructions to heat the naan. Mix a bit of water with the yogurt and drizzle over the potato mixture. Garnish with coriander and serve alongside the warm naan.
