Sweet potato and apple spirals tossed in vanilla olive oil, brown sugar, and spices, then roasted for a delicious snack.
Ingredients:
  • cooking spray
  • 0.33333334326744 vanilla bean
  • 0.25 cup olive oil
  • 1 large sweet potato, peeled and halved
  • 1 large Red Delicious apple, unpeeled
  • 2 tablespoons brown sugar
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 pinch ground nutmeg
  • ground ginger
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare a baking sheet by lining it with aluminum foil and spraying it with nonstick spray.
  • Using a sharp knife, split the vanilla bean lengthwise and scrape out the seeds with the flat side of the knife.
  • In a small saucepan, gently heat vanilla bean and seeds with olive oil on low heat until fragrant, for about 5 minutes. Remove from heat and allow to cool for another 5 minutes before using.
  • Spiralize sweet potato and apple into noodles, then transfer to a large bowl.
  • Combine 2 tablespoons of olive oil with brown sugar, cinnamon, salt, nutmeg, and ginger in a small bowl. Pour the mixture over the sweet potato and apple, then toss until evenly coated.
  • Arrange the sweet potato and apple slices evenly on the baking sheet.
  • Bake in the preheated oven, flipping halfway, until golden brown for about 10 minutes. Increase oven temperature to 425 degrees F (218 degrees C) and roast until the sweet potato edges brown and become crispy, for an additional 5 to 10 minutes.
