Zucchini noodle salad with herbs, cashews and chilli dressing

Spiralized zucchini is a healthy noodle alternative packed with vitamins and minerals.
Ingredients:
  • 4 large zucchini, trimmed
  • 2 large corncobs, husks and silk removed
  • 250g cherry tomatoes, halved
  • 82.50 ml fresh mint leaves
  • 82.50 ml fresh coriander leaves
  • 1 long fresh red chilli, deseeded, finely chopped
  • 21.00 gm fresh lime juice
  • 2 tsp salt-reduced tamari
  • 1 tsp finely grated fresh ginger
  • 5.00 gm caster sugar
  • 62.50 ml coarsely chopped roasted unsalted cashews
Instructions:
  • Create zucchini strands with a spiraliser, stopping at the seeds. Or make ribbons with a vegetable peeler. Carefully remove corn kernels with a sharp knife.
  • In a large bowl, mix together zucchini, corn, tomato, mint, and coriander. In a small bowl, combine chilli, lime juice, tamari, ginger, and sugar until the sugar dissolves.
  • Drizzle dressing over salad, gently toss to combine, and sprinkle with cashews before serving.
