Zucchini "pasta" salad: zoodles replace pasta for a flavorful, low-carb dish.
Ingredients:
  • 0.25 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 0.5 teaspoon dried basil
  • 1 pinch salt and freshly ground black pepper
  • 0.33333334326744 cup extra-virgin olive oil
  • 3 medium zucchini, ends trimmed
  • 0.25 cup chopped cilantro leaves and stems
  • 0.25 cup toasted pine nuts
Instructions:
  • Prepare the tangy vinaigrette by whisking together lemon juice, garlic, mustard, honey, basil, salt, and pepper in a small bowl. Slowly drizzle in olive oil while whisking briskly until the vinaigrette comes together; set aside.
  • Prepare the salad: Spiralize the zucchini into zoodles using a thin blade. Cut the long strands into shorter lengths with kitchen shears, then transfer to a large bowl. Add cilantro to the bowl.
  • Just before serving, drizzle vinaigrette onto zoodles, gently toss to coat. Taste and adjust seasoning as needed. Top with pine nuts and serve promptly.
