Cheesy mashed potato pancakes, a delightful breakfast treat.
Ingredients:
  • 2 cups mashed potatoes
  • 1 egg, beaten
  • 0.5 cup all-purpose flour
  • 1 pinch garlic salt
  • 1 cup shredded Cheddar cheese
Instructions:
  • Combine mashed potatoes, egg, flour, salt (if needed), and garlic salt in a medium mixing bowl until well mixed.
  • In a large frying pan over low heat, melt butter. Place pancake-size lumps of mashed potatoes into the pan and flatten to 1/2 to 1 inch thickness. Sprinkle with cheddar cheese and top with more potato mixture. Cook until the bottom is browned, about 10 minutes, then flip and brown the other side for another 10 minutes.
