Creamy mashed Yukon gold potatoes with goat cheese, sage, and rich, flavorful brown butter. Delicious upgrade to a classic dish.
Ingredients:
  • 1 1/2 poundyukon gold potatoes, peeled and quartered
  • 1 teaspoon salt
  • 3 tablespoonbutter
  • 1 teaspoon fresh sage, chopped
  • 4 ounces goat cheese
  • 3 tablespoons milk
  • Black pepper to taste
Instructions:
  • Prepare perfectly tender potatoes: In a pot, cover potatoes with cold water and salt. Bring to a boil, then simmer until easily pierced with a fork, about 15-20 minutes. Drain.
  • In a stainless steel saucepan, melt the butter over low heat. Keep a close eye on it as it foams, then settles down. When you notice brown flecks forming and a nutty fragrance, remove from heat.
  • Combine the chopped sage with butter, creating a fragrant infusion. Drizzle this aromatic mixture over the potatoes, enhancing their flavor profile.
  • Combine goat cheese and milk with potatoes, then mash together using a potato masher until smooth and well mixed. Season with salt and pepper to taste. Serve promptly.
