Thanksgiving-favorite sweet potato casserole topped with maple butter, cream, brown sugar, and crunchy pecans.
Ingredients:
  • 4 large sweet potatoes
  • 0.5 cup softened butter
  • 1 cup heavy cream
  • 2 tablespoons vanilla extract
  • 0.5 cup packed light brown sugar
  • 1 cup chopped pecans
  • 0.5 cup maple syrup
  • 2 eggs, beaten
  • 2 tablespoons maple syrup
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and cover a baking sheet with shiny aluminum foil.
  • Arrange the sweet potatoes on the baking sheet.
  • Bake in the preheated oven for 45 minutes to 1 hour until soft. Cool slightly, then peel and transfer to a large bowl.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously butter a 2-quart casserole dish.
  • Mix together warm potatoes, butter, cream, vanilla, brown sugar, salt, 1 cup pecans, 1/2 cup maple syrup, and beaten eggs until smooth. Spread the potato mixture into a casserole dish and top with the remaining 1/4 cup pecans and 2 tablespoons maple syrup.
  • Bake in the preheated oven for 30 to 35 minutes until thoroughly heated.
