Ingredients:
  • 1 whole turkey (12 lb), thawed if frozen
  • 2 tablespoons butter
  • 3 tablespoons chopped fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 tablespoons real maple or maple-flavored syrup
Instructions:
  • Preheat oven to 325°F. Remove giblets and neck, setting them aside for future use. Thoroughly rinse turkey inside and out with cold water, then pat dry with paper towels.
  • Cross the wings behind the turkey so the tips touch. If the turkey doesn't have an ovenproof plastic leg band, tuck the legs under the band of skin at the tail or tie them together with kitchen string. Place the turkey breast side up on a rack in a large roasting pan. Melt 1 tablespoon of butter and brush it over the turkey.
  • Combine thyme, salt, allspice, pepper, and oil in a small bowl. Rub the mixture all over the turkey. Insert an ovenproof meat thermometer into the thickest part of the inside thigh, ensuring the tip does not touch the bone.
  • Roast uncovered for 3 to 3.75 hours. After 2 hours, remove any plastic bands or strings from the legs to ensure even cooking. Lightly cover the turkey with foil to avoid excessive browning.
  • Melt the last tablespoon of butter and combine it with the syrup. Brush half of the mixture over the turkey 20 minutes before it's done cooking, and brush the remaining half 10 minutes later.
  • Let the turkey rest on a warm platter covered with foil for 15 minutes before carving. Save the pan drippings for gravy if desired.
