Honey-Glazed Turkey Breast with Roasted Pineapple

Elevate your roast turkey with a tantalizing blend of spices and fresh pineapple for a bold and delicious twist!
Ingredients:
  • 1 bone-in whole turkey breast (4 1/2 to 5 pounds), thawed if frozen
  • 1 pineapple (3 pounds)
  • 1/2 cup dry white wine or apple juice
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon finely chopped gingerroot or 1/2 teaspoon ground ginger
  • 1 large clove garlic, finely chopped
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water
Instructions:
  • Preheat the oven to 325°F. Place the turkey breast, skin side up, on a rack in a shallow roasting pan. Insert a meat thermometer into the thickest part of the meat without touching the bone. Roast uncovered for 1 hour.
  • Remove the rind from the pineapple and cut it in half lengthwise. Remove the core and slice each half into 8 pieces. Combine wine, honey, soy sauce, gingerroot, and garlic. Place the pineapple slices around the turkey on a rack. Brush the turkey and pineapple with the wine mixture. Roast uncovered for an additional hour, brushing frequently with the wine mixture, until the thermometer reads 165°F. Take out the turkey and pineapple, keep them warm, and discard any leftover wine mixture.
  • Transfer the pan drippings to a measuring cup and remove any extra fat. Combine with water to reach 1 cup. Bring the mixture to a boil in a small saucepan. In a separate bowl, mix cornstarch with cold water, then whisk into the drippings. Boil and stir for 1 minute before serving with turkey.
