Grilled Honey-Dijon Brined Turkey Breast

"Grilled turkey breast with a hint of sweet honey and tangy mustard glaze."
Ingredients:
  • 11 cups cold water
  • 1 cup honey
  • 1/2 cup Dijon mustard
  • 1/3 cup salt
  • 1 bone-in whole turkey breast (5 to 6 lb), thawed if frozen
  • 3 tablespoons olive or vegetable oil
  • 1 teaspoon dried marjoram leaves
  • 1 teaspoon ground mustard
  • 1 teaspoon garlic-pepper blend
Instructions:
  • Combine water, honey, Dijon mustard, and salt in a 6-quart container or stockpot until honey and salt dissolve. Submerge turkey breast in the brine mixture, cover, and refrigerate for 12 to 24 hours.
  • Preheat grill for indirect cooking according to manufacturer's instructions. Take turkey out of brine; rinse well under cool water and dry with a gentle pat. Discard the brine.
  • Combine the remaining ingredients in a small bowl and generously brush the mixture over the turkey. Insert an ovenproof meat thermometer into the thickest part of the breast, ensuring the tip does not touch the bone.
  • Set the turkey on the cool side of a 2-burner gas grill or over a drip pan on a charcoal grill. If using a one-burner gas grill, cook over low heat. Cover the grill and cook over medium heat for 1 hour.
  • Continue to roast the turkey, covered, for an additional 45 to 60 minutes, or until a thermometer inserted reads 165°F.
  • Take the turkey off the grill and tent it with foil, allowing it to rest for 5 to 10 minutes before carving.
