Indulgent ricotta toast with grilled nectarines, almonds, mint, and honey - a dreamy brunch or snack.
Ingredients:
  • 1 teaspoon olive oil
  • 1 large nectarine, pitted and cut into 8 wedges
  • 2 thick slices crusty bread
  • 2 tablespoons olive oil
  • 0.25 cup whole-milk ricotta cheese
  • 1 tablespoon crushed sliced almonds
  • 2 leaves fresh mint, minced
  • 2 teaspoons honey, or to taste
Instructions:
  • Heat up your outdoor grill until it reaches medium-high heat and lightly oil the grate.
  • Drizzle 1 teaspoon of olive oil onto a small plate and arrange nectarine wedges to coat all sides. Brush both sides of the bread with 2 tablespoons of olive oil.
  • Grill the nectarines on the hot grate for 1 to 2 minutes per side until lightly charred. Transfer them to a plate. Once slightly cooled, cut each nectarine wedge in half lengthwise to create 16 pieces.
  • Grill bread slices until crispy with grill marks, about 1 minute per side, then transfer to a plate.
  • Generously slather ricotta cheese on toast slices. Place 8 nectarine slices on each toast and sprinkle with almonds. Add a touch of fresh mint and a drizzle of honey. Cut toast in half and enjoy!
