Roast turkey with bacon stuffing

Deliciously seasoned Christmas turkey with flavorful stuffing.
Ingredients:
  • 5.5kg turkey
  • 36.40 gm olive oil
  • Gravy, to serve
  • 50g butter, chopped
  • 1 leek, trimmed, halved, washed, chopped
  • 2 garlic cloves, crushed
  • 4 rindless shortcut bacon rashers, chopped
  • 125.00 ml pitted prunes, chopped
  • 57.50 gm chopped walnuts
  • 40.00 ml shredded fresh sage leaves
  • 500.00 ml fresh breadcrumbs
Instructions:
  • Prepare the stuffing by melting butter in a frying pan over medium heat. Sauté leek and garlic for 3 minutes until fragrant. Add bacon and cook for an additional 5 minutes until leek is soft. Transfer the mixture to a bowl and combine with prune, walnut, sage, and breadcrumbs.
  • Preheat the oven to 180C/160C fan-forced. Remove the turkey's neck. Rinse the turkey, inside and out, under cold water, then pat dry with paper towels. Fill the neck cavity loosely with stuffing and secure the skin with toothpicks. Stuff the main cavity and secure the skin with toothpicks. Tie the legs together with kitchen string.
  • Grease a wire rack in a large roasting pan and place the turkey on top. Pour 1 1/2 cups of cold water into the pan. Brush the turkey with oil and season generously with salt and pepper. Cover the pan tightly with greased foil and roast for 2 hours. Remove the foil and continue roasting for an additional 40 to 50 minutes or until the turkey is browned and the juices run clear when the thigh is pierced with a skewer. Let the turkey rest loosely covered with foil for 10 minutes before removing and discarding any toothpicks and strings. Serve with gravy.
