Indulge in a savory roast turkey buffe stuffed with cheesy bacon bread filling for a delicious dinner.
Ingredients:
  • 3.2kg (size 32) frozen turkey buffe, thawed
  • 2 lemons, quartered
  • 8 sprigs fresh thyme
  • 40g butter, softened
  • Gravy, to serve
  • 520g loaf sourdough, cut into 2cm cubes
  • 200g streaky bacon, chopped
  • 200g Danish fetta, crumbled
  • 375.00 ml grated cheddar
  • 2 green onions, chopped
  • 40.00 ml chopped fresh oregano
  • 50g butter, melted
  • 56.88 gm extra virgin olive oil
  • 2 garlic cloves, crushed
  • 2 tsp chopped fresh thyme leaves
  • 62.50 ml roughly chopped fresh flat-leaf parsley leaves
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a wire rack and place the turkey on it in a large flameproof roasting pan. Add 2 cups of water to the pan and stuff the turkey cavity with lemon and thyme for extra flavor.
  • Massage the turkey with butter, ensuring every inch is coated. Season generously with salt and pepper. Cover the pan securely with lightly greased foil and roast for 1 hour and 30 minutes.
  • Uncover the turkey and continue roasting, brushing with pan juices every 20 minutes, for another hour or until the turkey is golden and juices run clear when the thickest part is pierced with a skewer. Add more water to the pan if needed. Gently transfer the turkey to a plate and tent loosely with foil. Let it rest before serving.
  • Combine sourdough, bacon, fetta, cheddar, onion, and oregano in a large bowl. Whisk butter, oil, garlic, and thyme in a jug. Season with salt and pepper, then drizzle over bread mixture. Toss to combine, then transfer to a greased 12-cup roasting pan. Bake for 45-50 minutes, tossing halfway, until bread is golden and crisp. Finish with a sprinkle of parsley. Serve sliced turkey with stuffing and gravy.
