Enhance your Christmas roast with delicious maple syrup glazed turkey.
Ingredients:
  • 3.2kg (size 32) frozen turkey buffe, defrosted following packet directions
  • 1020.00 gm chicken style liquid stock
  • 46.80 gm wholegrain mustard
  • 84.38 gm maple syrup
  • 18.20 gm extra virgin olive oil
  • Roasted pumpkin, to serve
  • Broccolini, (steamed with flaked almonds - optional), to serve
  • 40.00 ml plain flour
  • 62.50 ml dry apera (sherry)
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Arrange the turkey on a greased wire rack in a large flameproof roasting pan. Pour the stock into the pan. Mix half of the mustard, half of the maple syrup, and half of the oil in a small bowl, then brush the mixture all over the turkey. Season with salt and pepper. Cover the pan tightly with lightly greased foil and roast for 1 hour. After removing from the oven, uncover the turkey. Mix the remaining mustard, maple syrup, and oil in a small bowl and brush it over the turkey. Re-cover the turkey and return to the oven to roast for another hour. Make sure to brush the turkey with the pan juices after 30 minutes.
  • Take the turkey out of the oven, remove the foil, and baste it with the delicious pan juices. Place it back in the oven without the foil and roast for an additional 20 minutes or until the turkey turns golden and the juices run clear when pierced with a skewer. If the pan starts to dry, add more stock. Once done, transfer the turkey to a platter, cover it with foil, and let it rest for 15 minutes.
  • Prepare the Gravy: Skim fat from the pan, leaving behind 1/4 cup of juices. Increase heat to high. Add flour and cook, stirring, for 3 minutes until bubbling. Gradually pour in apera and stock, stirring until smooth. Bring to a boil, then reduce to medium-low heat. Simmer and stir for 10 minutes until thickened. Season with salt and pepper to taste.
  • Present the carved turkey alongside a generous serving of savory gravy, roast pumpkin, and tender broccolini for a delectable meal.
