Elevate roast beef with cranberry stuffing and maple bacon.
Ingredients:
  • 36.40 gm olive oil
  • 1 brown onion, finely chopped
  • 40.00 ml fresh thyme leaves, plus extra sprigs, to serve
  • 1.5kg trimmed beef eye fillet (8cm thick)
  • 160g (1 1/2 cups) fresh sourdough breadcrumbs
  • 187.50 ml chopped fresh continental parsley leaves
  • 80g (1/3 cup) dried whole cranberries
  • 1 egg
  • 23.40 gm wholegrain mustard, plus extra, to serve
  • 14 rashers (about 400g) streaky bacon
  • 54.00 gm maple syrup
Instructions:
  • Preheat oven to 220C/200C fan forced. In a large frying pan over medium heat, heat half of the oil. Sauté the onion and thyme for 6 minutes until soft. Remove from pan and let it cool in a bowl. Wipe the pan clean.
  • In a hot pan, add the remaining oil. Season the beef, then sear on all sides for approximately 8 minutes until evenly browned. Remove from pan and allow to cool.
  • Combine onion mixture, breadcrumbs, parsley, cranberries, and egg in a food processor and blend until well mixed. Season generously. Pat beef dry with paper towel, spread mustard evenly over the top, then press stuffing onto the beef to cover completely.
  • Lay a large sheet of baking paper on a work surface with the short edge facing you. Arrange 10 bacon rashers in 2 rows down the center of the paper. Place the remaining 2 rashers at the top and bottom perpendicular to the rows. Put the beef in the middle of the bacon, with the stuffing facing up. Fold the end rashers over the short ends of the beef, then fold the side rashers over the beef to cover it completely.
  • Transfer the bacon-wrapped beef to a baking tray lined with parchment paper. Drizzle maple syrup evenly over the top. Bake for 30-35 minutes until the bacon is crispy. Allow it to rest for 15 minutes. Sprinkle with fresh thyme and slice before serving with extra mustard on the side.
