Irresistible maple-glazed bacon stuffing balls - perfect party bites!
Ingredients:
  • 2 x 250g packets Rindless Middle Bacon
  • 1 small onion, finely chopped
  • 1 red apple, cored, finely chopped (skin on)
  • 1 tsp finely grated lemon rind
  • 210g (3 cups) fresh wholegrain breadcrumbs
  • 40.00 ml currants
  • 40.00 ml pine nuts
  • 20.00 ml chopped fresh oregano leaves
  • 2 eggs
  • 80ml (1/3 cup) maple syrup
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Line a baking tray with non-stick baking paper. Cut 14 strips of bacon, each measuring about 20cm x 4-5 cm, and finely chop the rest.
  • In a large non-stick frying pan over medium heat, heat oil. Sauté onion for 1 minute, then add apple and continue stirring for 3-4 minutes until lightly golden. Add chopped bacon and cook for 2-3 more minutes. Remove from heat.
  • Mix lemon rind, breadcrumbs, currants, pine nuts, oregano, and eggs in a bowl. Season with salt and pepper, then shape the mixture into fourteen walnut-sized balls. Wrap each ball in bacon and secure with a toothpick before placing on a prepared tray.
  • Coat bacon balls with half of the maple syrup. Bake for 15 minutes. Brush with the remaining maple syrup and bake for an additional 15 minutes. Glaze with syrup from the tray and bake for 10 more minutes until sticky and golden. Serve.
