Maple Glazed Bacon and Chive Shortbread

Irresistible bacon shortbread squares with chive and maple make a perfect appetizer or cheese plate addition.
Ingredients:
  • 0.5 cup unsalted Gay Lea Butter, softened
  • 2 tablespoons icing sugar
  • Pinch salt
  • 0.5 cup chopped, crispy bacon
  • 2 tablespoons finely chopped chives
  • 1 cup all-purpose flour
  • 2 tablespoons rice flour
  • 1 tablespoon pure maple syrup
Instructions:
  • Prepare an 8-inch (20 cm) square baking pan by greasing it; set it aside. Using an electric mixer, beat butter with sugar and salt in a large bowl for 2 minutes until light and fluffy.
  • Mix in the bacon and chives until evenly incorporated. Combine all purpose flour with rice flour. Stir in the flour mixture to the butter mixture until just combined.
  • Evenly press the dough into the pan. Chill covered for 30 minutes until firm.
  • Preheat your oven to 325°F (160°C).
  • Gently cut the dough into 16 squares using a knife, making sure not to cut all the way through. Brush the top of the dough with maple syrup for added sweetness.
  • Bake for 25 to 35 minutes until golden and set. Slice through the scored wedges while hot. Let it cool on a wire rack.
