Maple Glazed Carrots with Bacon

Maple-balsamic roasted carrots with bacon and pecans - a delightful holiday side dish.
Ingredients:
  • 1 pound carrots, peeled
  • 0.25 cup pure maple syrup, or to taste
  • 2 teaspoons balsamic vinegar
  • sea salt to taste
  • 2 slices bacon
  • 3 tablespoons coarsely chopped toasted pecans
  • chopped parsley for garnish (optional)
Instructions:
  • Preheat the oven to 400°F (200°C) while you line a baking sheet with foil.
  • In a large bowl, combine maple syrup, balsamic vinegar, and salt, whisking until well blended. Cut peeled carrots in half lengthwise, then slice diagonally into 1/2-inch thick pieces. Add carrots to the maple mixture, ensuring they are thoroughly coated. Reserve any excess maple mixture for later use. Spread the carrots evenly on the baking sheet.
  • Roast carrots for 10 minutes, then continue roasting for an additional 10-15 minutes or until tender. Cooking time may vary based on the size of the carrots.
  • While you wait, sizzle up the bacon in a big skillet over medium-high heat, flipping occasionally, until it's perfectly browned all around, roughly 10 minutes. Rest the crispy strips on paper towels to absorb excess grease. Let them cool a bit, then give them a satisfying rough chop.
  • Transfer the tender carrots to a bowl, sprinkle with bacon and pecans. Drizzle with remaining maple mixture, toss to combine well. Garnish with chopped parsley and serve hot.
