Maple-glazed sweet potatoes with crispy bacon and caramelized onions - a show-stopping holiday side dish.
Ingredients:
  • 4 pounds sweet potatoes, peeled and cut in 1-inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 5 slices smoked bacon, chopped
  • 1 pound onions, thinly sliced
  • 1 cup pure maple syrup
  • 2 teaspoons fresh thyme
Instructions:
  • Heat the oven to 425 degrees F (220 degrees C). Combine sweet potato chunks, olive oil, salt, and black pepper in a large bowl, then spread the mixture onto a large rimmed baking sheet.
  • Roast in the oven until beautifully browned and tender, stirring halfway through the cooking time. This should take around 40 minutes.
  • Fry the bacon in a large skillet over medium heat until crisp and browned, about 10 minutes. Transfer the bacon to a bowl while keeping the flavorful grease in the skillet. Cook the onions in the bacon grease until golden brown, stirring frequently, around 10 minutes. Lower the heat, and continue cooking the onions until caramelized and tender, for another 10 to 15 minutes, stirring occasionally. Combine the onions with the bacon in the bowl and set aside.
  • In a hot skillet, combine the maple syrup and thyme, then let it come to a rolling boil. Reduce the syrup by half in 3 to 4 minutes. Add the roasted sweet potatoes and onion-bacon mixture to the skillet, tossing to coat the veggies in the maple glaze. Transfer to a serving dish.
