Crispy chicken tenders with maple syrup sauce over creamy sweet potato mash.
Ingredients:
  • 1.5 pounds sweet potatoes, peeled and cut into 1-inch pieces
  • 1 pound chicken tenders
  • 2 teaspoons steak seasoning (such as Montreal Steak Seasoning®)
  • 0.5 cup maple syrup
  • 0.5 cup sliced green onions
Instructions:
  • In a large pot, cook the sweet potatoes in water until tender. Drain and let them steam dry for a minute. Mash the potatoes and set aside.
  • Season chicken tenders with steak seasoning. Heat oil in a large skillet over medium heat, cook chicken until browned and fully cooked, about 5-8 minutes per side. Remove chicken and set aside. Add maple syrup to skillet, deglaze pan, bring to a boil, simmer for 2 minutes, then add green onions.
  • Present the mashed sweet potatoes on a platter, arrange the chicken tenders on top, and drizzle the delectable maple sauce over everything.
