Maple-Glazed Sweet Potatoes with Pecan Topping

Maple brown sugar pecan sweet potato slices.
Ingredients:
  • 3 poundred-fleshed sweet potatoes, peeled, cut into 1/4 inch-thick rounds
  • 1 teaspoon orange zest (optional)
  • 1/2 cup maple syrup
  • 6 Tbsp chilled butter, cut into 1/2 inch pieces (divided 2 Tbsp and 4 Tbsp)
  • 1 1/2 cups pecans, divided (3/4 cup and 3/4 cup)
  • 1/3 cup brown sugar, packed
Instructions:
  • Preheat your oven to 400°F.
  • Cook the sweet potatoes: Bring a pot of salted water to a boil (1 tablespoon salt for every two quarts of water). Add sweet potato rounds and cook for about 4 minutes until the water simmers again. Drain and rinse in cold water.
  • Prepare the baking dish by greasing it with butter. Layer the sweet potato rounds in the dish, slightly overlapping them to fill it up. Sprinkle each layer with salt and orange zest (if desired). Pour maple syrup over the sweet potatoes and dot with 2 tablespoons of butter.
  • Bake: Cover sweet potatoes with aluminum foil and bake until almost tender, approximately 20 minutes.
  • Prepare pecan topping: As the sweet potatoes bake, pulse 3/4 cup of pecans in a blender or spice grinder until coarsely ground. Chop the remaining 3/4 cup of pecans. Combine the ground pecans with brown sugar in a bowl. Add 4 Tbsp of butter and use your fingers to create a coarse meal texture. Stir in the chopped pecans.
  • Sprinkle the pecan mixture over the sweet potatoes and bake, uncovered, until the topping browns, approximately 15 minutes.
