Ingredients:
  • 93.60 gm seeded mustard
  • 32.00 gm brown sugar
  • 36.40 gm olive oil
  • 82.50 gm water
  • 3 cloves garlic, crushed
  • 2.8kg Ingham Easy-Carve Turkey Buffe
  • 300ml light thickened cream
  • Roast vegetables, to serve
Instructions:
  • Preheat your oven to 180°C.
  • In a small bowl, mix together mustard, sugar, oil, and garlic. Grease a roasting pan and pour water into it. Place the turkey, breast-side up, in the pan and spread the mustard mixture over it. Cover the pan with foil and bake in the oven for 1 hour 15 minutes.
  • Uncover and gently pierce the turkey in a few spots to enhance self-basting and promote browning. Bake for an additional 30 minutes. To test doneness, insert a skewer into the thickest part of the meat; clear juices indicate the turkey is cooked, but if they're slightly red, continue cooking a bit longer.
  • Take the turkey buffe out of the oven and let it rest, covered with foil, for 15 minutes. Put the roasting dish on the stove top, pour in the cream, and stir constantly until it simmers. Reduce heat and let it cook slowly until the sauce thickens.
  • Arrange succulent slices of juicy turkey alongside a colorful medley of perfectly roasted vegetables, then drizzle generously with rich, delicious sauce before serving.
