Mashed pumpkin with maple butter

Enhance mashed pumpkin with a touch of maple syrup for irresistible flavor.
Ingredients:
  • 2kg butternut or Queensland blue pumpkin
  • 40ml (2 tbsp) olive oil
  • 80g (4 tbsp) unsalted butter, plus extra to serve
  • 111.38 gm maple syrup, plus extra to drizzle
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • Preheat your oven to 180°C.
  • Halve the pumpkin, scoop out the seeds, and place it cut-side up on a baking tray. Drizzle with olive oil and cover with foil. Bake for one hour until tender. Let it cool, then scoop out the flesh into a large bowl.
  • Melt the butter and maple syrup, then add to the bowl and mash with the pumpkin. Stir in the parsley and season with salt and pepper. Just before serving, drizzle with extra butter and maple syrup.
