Pumpkin mash with burnt butter and sage

Elevate pumpkin and potato mash with brown butter and sage for a gourmet twist.
Ingredients:
  • 1kg butternut pumpkin, seeded, peeled, chopped
  • 1 large washed potato, peeled, chopped
  • 37.60 gm sour cream
  • 40g butter, chopped
  • 8 sage leaves
Instructions:
  • Cook the pumpkin and potato until tender using your preferred method. Drain them. Mash the vegetables in a large bowl until smooth using a potato masher or fork. Mix in the sour cream until fully incorporated. Season to taste.
  • In a frying pan over medium heat, melt the butter until golden. Add sage and cook for 3-4 mins until crisp. Serve the pumpkin mash in a bowl, drizzle with the butter mixture.
