Pumpkin and potato mash with pesto

Elevate mashed potatoes with a delicious twist of pumpkin and homemade pesto.
Ingredients:
  • 500g Sebago potatoes, peeled, chopped
  • 40g butter, chopped
  • 60ml (1/4 cup) milk, warmed
  • 500g pumpkin, peeled, steamed, mashed
  • Basil pesto, to serve
Instructions:
  • In a saucepan, simmer the potato in cold water until tender, about 25 minutes. Drain and return to the pan. Cook over low heat for 2-3 minutes until dry. Mash until smooth, adding butter and milk gradually. Swirl in mashed pumpkin and season with salt and white pepper. Finish with a dollop of pesto on top. Enjoy!
