Italian sausages with pumpkin and potato mash

Delicious pork sausages with quick pumpkin and potato mash - ready in 30 minutes!
Ingredients:
  • 450g pumpkin, peeled, cut into chunks
  • 2 medium potatoes, quartered
  • 40g butter, chopped
  • 36.40 gm olive oil
  • 2 x 500g packets italian pork sausages
  • 375g packet green beans, trimmed
  • 40.00 ml chives, chopped
  • 125.00 gm tomato chutney
Instructions:
  • Cook the pumpkin and potato until tender by boiling, steaming, or microwaving. Drain the vegetables and mash them in a large bowl with butter until smooth. Season to taste.
  • Heat half of the oil in a large frying pan over medium-high heat, brown sausages for 12 minutes, and set aside. Steam beans over boiling water for 2 minutes until tender, then toss with remaining oil and chives.
  • Plate the sausages alongside mashed potatoes, beans, and tomato chutney.
