Spicy Italian sausage with creamy pumpkin sauce over pasta for a quick and fancy meal.
Ingredients:
  • 1 pound hot Italian sausage
  • 0.5 onion, chopped
  • 4 cloves garlic, diced
  • 1 (16 ounce) package campanelle pasta
  • 2 cups chicken stock
  • 1 (15 ounce) can pumpkin puree
  • 0.5 cup half-and-half
  • 0.5 cup cream cheese
  • 0.5 cup grated Parmesan cheese, or to taste
  • 0.5 teaspoon freshly grated nutmeg
  • 1 pinch cayenne pepper
  • kosher salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh sage leaves
Instructions:
  • Begin by heating a large skillet over medium-high heat. Add the sausage to the skillet, breaking it into crumbles, and cook until it's nicely browned, which should take about 5 to 7 minutes. Once done, drain and discard any excess grease. Proceed by adding the onion and garlic to the skillet and continue cooking until the onion turns translucent, approximately 5 minutes.
  • Fill a large pot with salted water and bring to a boil. Add campanelle pasta and cook until al dente, 7 to 10 minutes, stirring occasionally.
  • Combine chicken stock, pumpkin, half-and-half, cream cheese, Parmesan cheese, nutmeg, cayenne pepper, salt, and black pepper with the sausage mixture. Simmer until the sauce is velvety and dense for about 5 to 7 minutes. Mix in the pasta until well-coated. Garnish with fresh sage leaves and enjoy.
