Indulge in juicy pork or save a sausage for another day!
Ingredients:
  • 1kg butternut pumpkin, peeled, cut into 4cm pieces
  • 4 small red onions, quartered
  • 6 garlic cloves, unpeeled
  • 36.80 gm rice bran oil
  • 750g pork sausage
  • 40.00 ml small fresh basil leaves
  • 125.00 ml shaved parmesan cheese
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and lightly grease a large baking dish.
  • Spread the pumpkin, onion, and garlic in the prepared dish, then generously drizzle with oil and toss to ensure all the ingredients are evenly coated. Roast in the oven for about 30 minutes or until the vegetables begin to soften.
  • Heat a non-stick frying pan over medium heat, then cook sausages for 5 minutes, turning occasionally, until browned.
  • Combine sausages with pumpkin mixture and bake until pumpkin is tender and sausages are fully cooked, about 20 minutes.
  • Garnish with basil and sprinkle with parmesan before serving.
