Transform leftover canned pumpkin and Italian sausage into a flavorful spicy chili topped with melted Cheddar cheese.
Ingredients:
  • 2 tablespoons butter
  • 1 onion, minced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 pound Italian sausage, casings removed
  • 1 (15 ounce) can kidney beans
  • 1 (8 ounce) can chopped mushrooms, drained and rinsed
  • 2 cups canned pumpkin puree
  • 0.25 cup milk
  • salt to taste
  • 0.5 cup grated Cheddar cheese
Instructions:
  • In a large skillet over medium heat, melt butter. Cook and stir onion and garlic until onion is translucent, about 5 minutes. Stir in chili powder and cumin, and cook until fragrant, about 2 minutes. Add sausage and cook, stirring to break up clumps, until juices run clear, 5 to 8 minutes.
  • Combine kidney beans and mushrooms in the skillet and cook for 5 minutes until heated through. Add pumpkin and cook for an additional 2 minutes until warm. Pour in milk and simmer for 10 minutes to allow flavors to meld. Season with salt, then sprinkle Cheddar cheese on top before serving.
