Spicy sausage biscuits filled with cheesy jalapeño peppers - a delicious armadillo dish.
Ingredients:
  • 24 jalapeno peppers
  • 1 (16 ounce) package Monterey Jack cheese, cubed
  • 1 pound sausage
  • 1 (16 ounce) package Cheddar cheese, shredded
  • 2 cups all-purpose baking mix
  • 1 tablespoon crushed red pepper flakes
  • 1 tablespoon garlic salt
Instructions:
  • Preheat the oven to 325°F (165°C) and lightly grease a medium baking sheet with cooking spray.
  • Make a lengthwise incision in each jalapeño to remove seeds and pulp. Fill jalapeños with cubes of Monterey Jack cheese.
  • Combine sausage, flavorful Cheddar cheese, baking mix, crushed red pepper, and garlic salt in a large bowl until fully mixed. Form egg-shaped balls by wrapping the sausage mixture around stuffed jalapeños. Arrange on the baking sheet.
  • Roast in the preheated oven until sausage is perfectly cooked and golden brown, around 25 minutes. Use an instant-read thermometer to ensure the center reads at least 160 degrees F (72 degrees C).
