Peruvian chicken and rice, vibrant with cilantro and aji amarillo paste, is a flavorful and simple meal to make.
Ingredients:
  • 3 skinless, boneless chicken breasts, cut in half
  • 0.5 cup vegetable oil, divided, or as needed
  • 0.5 red onion, diced
  • 3 cloves garlic, minced
  • 1.5 bunches cilantro leaves, lightly chopped
  • 1 tablespoon aji amarillo chile paste
  • 1 red bell pepper, diced
  • 2.5 cups water, or more as needed
  • 2 cups uncooked white rice
  • 1 (10 ounce) package frozen peas and carrots
Instructions:
  • Season the chicken generously with salt and pepper.
  • Heat up a large saucepan over medium-high heat with a generous amount of oil to cover the bottom. Sear chicken in the hot oil until golden brown on all sides, about 5 to 7 minutes in total. Transfer the chicken onto a plate.
  • Add a generous drizzle of oil to the pan, then toss in the onion and saute until translucent for about 5 minutes. Introduce the garlic and continue to saute for an additional 1 to 2 minutes. Mix in the cilantro, chile paste, salt, and pepper, cooking until the cilantro darkens, which should take 3 to 5 minutes. Pour in the chicken broth, deglazing the pan by scraping off the flavorful browned bits with a wooden spoon. Allow it to gently simmer for 3 to 5 minutes before serving.
  • Carefully pour the mixture into an electric blender and blend until smooth.
  • In the same pan over medium-high heat, saute the bell pepper in more oil until soft, about 5 minutes. Add the chicken to the pan with the cilantro mixture. Cover, reduce heat to low, and cook for 20 to 30 minutes until chicken is cooked through and juices run clear.
  • Take out the chicken from the pan. Pour in water and rice, adjusting with more water if needed. Bring to a boil, cover, reduce heat to low, and simmer until the liquid is absorbed and rice is tender, for 20 to 40 minutes. Then, mix in peas, carrots, and chicken, and cook until heated through, for 5 to 10 minutes.
