Discover a vibrant Peruvian beet salad that's a must-have with any meal, even convincing picky eaters.
Ingredients:
  • 4 medium beets
  • 2 large red potatoes
  • 4 carrots
  • 2 tablespoons mayonnaise, or to taste
  • 1 tablespoon prepared yellow mustard, or to taste
Instructions:
  • In a large pot, bring water to a boil and add beets. Cook for 30 minutes. Then add potatoes and cook for another 30 minutes. Finally, add carrots and continue boiling until all vegetables are soft, about 15 minutes. Drain and allow the vegetables to cool to room temperature before handling.
  • Cube the vegetables, then toss them in a bowl with mayonnaise and mustard until well coated. Serve warm.
