Simple red potato salad with pickles, eggs, and creamy dressing - a must-have side for summer BBQs!
Ingredients:
  • 5 pounds red potatoes, chopped
  • 3 cups mayonnaise
  • 2 cups finely chopped pickles
  • 5 large hard-cooked eggs, chopped
  • 0.5 cup chopped red onion
  • 0.5 cup chopped celery
  • 3 tablespoons prepared mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt, or to taste
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Let simmer over medium-low heat until tender, around 10 minutes. Drain the potatoes and return them to the pot to dry and cool.
  • Mix together a delightful combination of mayonnaise, pickles, hard-cooked eggs, red onion, celery, mustard, cider vinegar, salt, and pepper in a large bowl. Gently fold in the cooled potatoes until fully incorporated.
  • Refrigerate the potato salad for optimal flavor before serving, ideally overnight.
