Potato salad

Lighten up classic potato salad without sacrificing flavor or satisfaction.
Ingredients:
  • 1kg desiree potatoes, peeled, cut into 2cm cubes
  • 247.50 gm fat-free mayonnaise
  • 1 small lemon, juiced
  • 1 small red onion, finely chopped
  • olive oil cooking spray
  • 100g shaved 97% fat-free honey leg ham, finely chopped
  • 125.00 ml basil leaves, finely shredded
Instructions:
  • In a large saucepan, cover the potatoes with cold water and bring to a boil over high heat. Reduce heat to medium and cook the potatoes uncovered for 3 to 4 minutes until tender. Drain and transfer to a bowl.
  • In a small bowl, mix together mayonnaise, 2 tablespoons of lemon juice, onion, and salt. Drizzle half of the mixture over the warm potato so it can soak up the flavors. Use a plastic spatula to gently coat the potato without breaking it. Cover with plastic wrap and let it cool.
  • 1. Preheat a non-stick frying pan over medium heat and lightly coat it with oil. Cook the ham for 3 to 4 minutes until golden, then set it aside to cool. 2. Combine the cooked ham, basil, and remaining dressing with the potato. Gently stir to mix well. 3. Season with salt and pepper, then serve.
