Potato salad

Ingredients:
  • 1.6 kg new potatoes
  • 4 heaped tablespoons natural yoghurt
  • 4 teaspoons English mustard
  • extra virgin olive oil
  • 1 lemon
  • edible flowers to serve (optional)
Instructions:
  • On the day, wash, halve large potatoes, boil in salted water for 15 minutes until soft. Drain. Mix yoghurt, English mustard, olive oil, lemon zest, juice in a bowl. Add warm potatoes, season to taste. To serve, sprinkle with edible flower petals like marigolds, violas, or nasturtiums. Serve hot, warm, or cold.
