Vibrant red cabbage and apple salad bursting with flavor and nutrients. Vegan-friendly with agave substitution for honey.
Ingredients:
  • 0.5 medium head red cabbage, shredded
  • 1 teaspoon salt
  • 2 red apples, thinly sliced
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons liquid honey
  • 2 tablespoons rapeseed oil
Instructions:
  • Massage the red cabbage with salt until it softens, then fold in the apples.
  • Combine white balsamic vinegar and honey, then whisk in oil. Pour over salad, toss to coat, and let sit for at least 1 hour to meld flavors.
