Indulge in succulent pan-seared duck breasts with flavorful cabbage and apples for a gourmet meal.
Ingredients:
  • 50g butter
  • 1 red apple, cored, cut into wedges
  • 8.00 gm brown sugar
  • 4 (about 800g) duck breast fillets
  • 1/2 red cabbage, finely shredded
  • 1 garlic clove, crushed
  • 250ml apple cider
  • 125ml chicken stock
  • 55g walnut
  • 1 tsp caraway seeds
  • 62.50 ml finely chopped chives
Instructions:
  • Preheat your oven to 180°C. In a large frying pan over high heat, melt half of the butter. Add the apple slices and sprinkle with sugar. Cook, turning occasionally, for 2-3 minutes until the apple caramelizes. Transfer the apple slices to a plate and cover with foil to keep warm.
  • Lower the heat to medium-high. Season both sides of the duck breasts generously with salt and pepper. Sear each side for 1-2 minutes until beautifully golden. Place the duck breasts on an oven tray and bake in a preheated oven for 10 minutes for medium doneness or until cooked to your preference. Take out of the oven and let them rest covered for 10 minutes before serving.
  • In a large frying pan over high heat, melt the remaining butter until foaming. Add cabbage and garlic, cook for 2 minutes until cabbage begins to wilt. Pour in cider and chicken stock, bring to a boil. Reduce heat to medium, cook for 10 minutes until cabbage is tender and liquid evaporates. Mix in walnuts and caraway seeds. Season with salt and pepper. Remove from heat, add chives, toss to combine.
  • Arrange the cabbage and apples on serving plates, followed by thick slices of duck on top of the cabbage. Drizzle with pan juices before serving.
