Indulge in a succulent wild duck seasoned and stuffed with aromatic apples, celery, and onion for a decadent dish.
Ingredients:
  • 1 (4 pound) whole duck
  • 1 teaspoon poultry seasoning
  • 0.5 tablespoon butter
  • 3 tablespoons chopped onion
  • 5 stalks celery, chopped
  • 3 cups peeled, cored and chopped apple
  • 3 cups cornbread crumbs
  • 1 tablespoon olive oil
Instructions:
  • Wash duck and dry thoroughly; season generously with salt, pepper, and poultry seasoning.
  • 1. In a small skillet over medium heat, gently melt butter until fragrant and golden. 2. Saute onion and celery in the aromatic butter until they soften and release their flavors. 3. In a medium bowl, toss the sauteed vegetables with apple and cornbread crumbs. 4. Combine the ingredients to create a flavorful dressing, adding a splash of water if needed to achieve the desired moistness.
  • Preheat your oven to 350°F (175°C) for the perfect temperature to bake your dish.
  • Stuff the duck's cavity with the delicious dressing and securely close it with kitchen twine. Gently massage the outside of the bird with olive oil before placing it in a shallow roasting pan or a 9x13 inch baking dish.
  • Bake until internal temperature reaches 180°F (80°C), about 60-80 minutes in a preheated oven.
