Quince-Apple Sauce

"Caramelized quinces add a sweet touch to applesauce, perfect for pairing with pork roast or duck."
Ingredients:
  • 2 cups water
  • 1 pound quinces - peeled, cored, and diced
  • 0.5 lemon, juiced
  • 1 pound apples - peeled, cored and chopped
  • 0.5 cup sugar, or more to taste
Instructions:
  • Check 2 jars (16 ounces each) for cracks and rust on rings, and discard any damaged ones. Keep them in simmering water until apple sauce is prepared. Wash new lids and rings in warm, soapy water.
  • In a pot over medium heat, simmer water, quinces, and lemon juice until softened, about 8 to 10 minutes. Stir in apples and sugar, then continue simmering until all fruit is very soft, about 10 to 15 minutes. Remove from heat and strain through a sieve.
  • Stir the apple-quince mixture over heat until it is piping hot.
  • Transfer the quince-apple sauce into hot, sterilized jars, leaving 1/4 inch of space at the top. Use a clean knife or thin spatula to eliminate any air bubbles. Clean the rims with a damp paper towel to get rid of any spills. Seal tightly with lids and screw rings.
  • Fill a large stockpot halfway with water and bring to a boil. Using a holder, carefully lower jars into the boiling water making sure they are 2 inches apart. Add more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 5 minutes.
  • After removing the jars from the stockpot, let them cool for 12 to 24 hours, ensuring they're spaced apart. Press the center of each lid to check for proper seal. Once cooled, remove the rings and store the jars in a cool, dark place.
