Impress guests with crispy duck and grilled apples.
Ingredients:
  • 2.15kg whole duckling
  • 36.40 gm Brand pure olive oil
  • 3 jazz apples, thickly sliced
  • 20.00 ml thyme leaves
  • 100g Brand 4 leaf salad mix, to serve
  • 56.88 gm extra virgin olive oil
  • 20.00 ml brand red wine vinegar
Instructions:
  • Preheat your oven to a toasty 220C or 200C for fan-forced ovens.
  • Prepare the duck by trimming off any excess fat, then rinse and dry thoroughly with paper towels. Position the duck on a rack in a roasting pan, ensuring the breast side is facing up. Drizzle 1 tablespoon of olive oil over the duck and generously season. Bake the duck in the oven at 200C for 1 hour, then lower the temperature to 180C (160C fan) and continue baking for another hour or until a skewer inserted into the thickest part produces clear juices. Allow the duck to rest for 15 minutes before serving.
  • Preheat a hot chargrill. Brush apple slices with the remaining olive oil. Grill apples for a total of 2-4 minutes, turning once, until golden and tender, then sprinkle with thyme.
  • Remove succulent pieces of duck meat from the carcass. Plate alongside fresh salad leaves and charred apple slices. Combine premium extra virgin olive oil and vinegar, then generously pour over the vibrant salad.
