Hoisin duck noodles

Indulge in succulent roast duck with crispy skin in this flavorful noodle dish.
Ingredients:
  • 1 x 300 g free-range duck leg
  • red wine vinegar
  • 2 tablespoons hoisin sauce
  • 150 g medium egg noodles
  • ½ a bunch of fresh mint (15g)
  • ½ a bunch of fresh coriander (15g)
  • ¼ cucumber (160g)
  • 4 spring onions
  • 160 g sugar snap peas
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. Season the duck leg with salt and pepper, then place in a high-sided roasting tray. Roast for 1½ hours until tender. Set the duck aside to cool. Remove excess fat if desired. In the same tray, over medium-high heat, add water and red wine vinegar. Bring to a simmer, scraping any bits from the bottom. Stir in hoisin sauce. Cook noodles as directed. Add them to the tray and mix well to absorb the flavors. Shred the duck, crisping the skin separately. Return the meat to the tray with more hoisin sauce. Cook until crispy and sticky. Serve noodles in bowls, topped with the duck, crispy skin, herbs, and sliced vegetables. Enjoy!
