Red cabbage, apple & cranberry salad

Elevate your salad game with a crunchy apple and cabbage salad twist.
Ingredients:
  • 75g sweetened dried cranberries
  • 125ml apple juice
  • 30g unsalted butter
  • 2-3 pink lady apples, cored, sliced
  • 750g cabbage
  • 125.00 ml chopped flat-leaf parsley
  • 57.50 gm toasted walnut halves
  • 40.00 ml red wine vinegar
  • 11.80 gm Dijon mustard
  • 125ml oil
Instructions:
  • Soak cranberries in apple juice for 1 hour to plump them up. Drain, and remember to save the flavorful juice. Melt butter in a frypan over medium heat, then sauté apple slices for 2-3 minutes until they turn golden and delicious.
  • Combine cabbage, parsley, nuts, and cranberries in a bowl. In a pan, cook reserved juice over high heat for 1-2 minutes until reduced by half. Whisk reduced juice with vinegar, mustard, and oil, season to taste, and mix into the salad.
