Saltado de Vainitas (Peruvian Green Beans with Chicken)

Delicious Peruvian chicken dish with green beans, tomatoes, and onion served over rice.
Ingredients:
  • 1 tablespoon canola oil, divided
  • 3 cloves garlic, minced
  • 2 chile peppers, seeded and diced
  • 1.25 pounds chicken, cut into 1-inch cubes
  • 6 tablespoons soy sauce, divided
  • 1 tablespoon ground cumin, divided
  • 1 red onion, halved and sliced
  • 4 roma (plum) tomatoes, cut into eighths
  • 2 (12 ounce) packages frozen French-style green beans, thawed
  • 3 tablespoons white wine vinegar
  • 1 cup chopped cilantro
Instructions:
  • In a wok or large skillet, heat half of the canola oil over medium-high heat. Saute garlic and chile peppers until fragrant, about 1 minute. Add chicken and mix in half of the soy sauce and half of the cumin. Cook until chicken is no longer pink, 5 to 7 minutes. Transfer mixture to a bowl, leaving some drippings in the skillet and return to heat.
  • In the same skillet, heat the rest of the oil along with the drippings. Sauté the onion with the remaining soy sauce and cumin until translucent, approximately 5 minutes. Introduce the tomatoes to the mix and cook until slightly tender, around 1 minute.
  • Add the chicken back to the wok along with green beans and vinegar. Cook and stir until green beans are tender, around 10 minutes. Season with salt, sprinkle with cilantro, and toss everything to combine.
