Peruvian Lomo Saltado

Peruvian sliced beef stir-fry with hot chiles, tomatoes, onions, and crispy fries.
Ingredients:
  • 1 (16 ounce) package frozen French fries
  • 1 pound beef tri tip, sliced 1/8 to 1/4 inch thick
  • salt and pepper to taste
  • 1 large onion, sliced into strips
  • 3 large tomatoes, peeled, seeded, and sliced into strips
  • 1 yellow chili pepper (preferably Peruvian aji amarillo)
  • 0.25 cup distilled white vinegar
  • 1 dash soy sauce to taste
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Spread the frozen French fries out evenly on a dry baking sheet.
  • Bake until beautifully golden, about 22-24 minutes in the preheated oven.
  • Heat 2 tablespoons of oil in a frying pan until sizzling. Season sliced beef with salt and pepper, then sauté in the hot oil until just cooked and juicy. Transfer the beef to a plate using a slotted spoon.
  • Sauté onions in beef drippings until translucent, then add tomato and aji amarillo. Cook until tomato softens before pouring in vinegar and soy sauce.
  • Place the French fries and beef in the pan. Cook covered until the beef is fully cooked, approximately 3 minutes. Season with salt and pepper and garnish with chopped parsley before serving.
