Lomo Saltado (Peruvian Steak Stir-Fry)

Peruvian steak stir-fry with French fries - a burst of salty, sweet, sour, and spicy flavors for a truly special dish.
Ingredients:
  • kosher salt to taste
  • 1.25 pounds top sirloin steak
  • 3 tablespoons soy sauce, divided
  • 1 teaspoon white sugar
  • 6 tablespoons olive oil, divided
  • 1 (16 ounce) package frozen crinkle-cut French fries
  • 1.5 cups sliced red onion
  • 1 medium orange bell pepper, sliced
  • 1 habanero pepper, seeded and minced
  • 0.5 cup sliced green onion
  • 2 cloves garlic, minced
  • 1 teaspoon minced fresh ginger root
  • 4 medium roma (plum) tomato
  • 0.25 cup white vinegar
  • 0.25 cup chopped fresh cilantro
Instructions:
  • Cut beef into thin 1/4-inch strips and place in a bowl. Mix in soy sauce and sugar until well combined. Marinate in the refrigerator for at least 1 hour, or longer for even better flavor.
  • Preheat your oven to 200°F (90°C) and line a sheet pan with a silicone liner like Silpat®.
  • In a large, nonstick skillet over medium-high heat, sizzle 2 tablespoons of olive oil. Add French fries and fry till golden and crisp, about 5 to 7 minutes. Keep warm in the preheated oven.
  • In a hot skillet, heat the olive oil until it begins to smoke. Sear the beef strips in small batches for 1 to 2 minutes per batch until browned but slightly pink. Transfer each batch to a plate to reserve for later, ensuring not to overcook as it will finish cooking with the vegetables.
  • Heat up the skillet over high heat and pour in the remaining 2 tablespoons of olive oil. Add the red onion, bell pepper, habanero, and green onion, then sprinkle a generous pinch of salt. Sauté the ingredients, stirring constantly, until the onions and peppers slightly soften, which should take 3 to 5 minutes.
  • Sauté garlic and ginger in the pan for 1 minute. Add tomato wedges and cook until they soften and release juices, about 3 minutes. Stir in 2 tablespoons of soy sauce, white vinegar, and browned beef with its juices. Mix well.
  • Combine freshly chopped cilantro and crispy, cooked French fries in the pan, ensuring they are evenly mixed. Season with salt to taste, and adjust if necessary. Serve promptly.
