Toasted Costeno amarillo chile peppers blended with tomatillos and spices for a flavorful topping.
Ingredients:
  • 6 costeno amarillo chile peppers
  • 0.5 pound tomatillos, husked
  • 1 clove garlic
  • 0.5 cup chopped onion
  • 0.33333334326744 cup chopped fresh cilantro
Instructions:
  • In a medium iron skillet over medium high heat, sauté the Costeño Amarillo chile peppers until they turn dark brown, stirring frequently to prevent burning. Set aside once done.
  • In a medium saucepan, simmer tomatillos in water until tender, about 5 minutes. Drain and set aside.
  • Blend chile peppers, tomatillos, and garlic until smooth in a blender or food processor.
  • Step it up a notch! Place the spicy chile pepper mixture into a medium bowl, then fold in the fresh onion, fragrant cilantro, and a hint of salt. Let it cool in the fridge until it's time to enjoy.
