Creamy pumpkin and Italian sausage campanelle - a cozy fall main dish.
Ingredients:
  • 1 pound bulk Italian sausage
  • 0.5 onion, diced
  • 4 cloves garlic, diced
  • 1 (16 ounce) package campanelle pasta
  • 1 (15 ounce) can pumpkin puree
  • 1 (14.5 ounce) can chicken broth
  • 0.5 cup half-and-half
  • 0.5 cup sour cream
  • 0.5 teaspoon grated nutmeg
  • 0.5 teaspoon ground cinnamon
  • salt and ground black pepper to taste
  • 1 tablespoon grated Parmesan cheese, or to taste
  • 0.25 teaspoon Italian seasoning, or to taste
Instructions:
  • In a large skillet over medium-high heat, brown the Italian sausage, breaking it into crumbles as it cooks, for about 10 minutes. Drain excess grease, then add onion and garlic to the skillet and cook until onion is translucent, about 5 minutes.
  • 1. Fill a large pot with lightly salted water and bring to a boil. Add campanelle pasta and cook uncovered until al dente, about 10 minutes. Drain.
  • Combine pumpkin puree, chicken broth, half-and-half, sour cream, nutmeg, cinnamon, salt, and black pepper with the sausage mixture. Cook and stir frequently until the sauce becomes thick and creamy, which should take around 5 minutes.
  • Combine the cooked campanelle pasta with the sausage and pumpkin mixture in a large pot. Heat over medium-high heat, stirring gently until heated through, about 4 to 5 minutes. Serve sprinkled with Parmesan cheese and Italian seasoning.
