Penne with Italian Sausage, Mushrooms, and Pumpkin Sauce

Cozy up with Penne pasta, Italian sausage, mushrooms, and pumpkin sauce - a fall favorite!
Ingredients:
  • cooking spray
  • 2 ounces dried porcini mushrooms
  • 1 pound sweet Italian sausage links
  • 3 tablespoons butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh sage
  • 0.25 teaspoon ground nutmeg
  • 2 cups pumpkin puree
  • 1 cup shredded Gruyere cheese
  • 0.5 cup heavy whipping cream
  • 1 pound penne pasta
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), and generously coat a 9x13-inch pan with cooking spray.
  • Soak dried porcini mushrooms in a bowl of water until rehydrated. Drain, reserving the flavorful mushroom-infused water, then finely chop the mushrooms.
  • In a skillet over medium heat, cook the sausage until it is fully cooked, for about 10 minutes. Let it cool slightly, then slice it on the diagonal.
  • In a skillet, melt butter over medium heat and sauté onion and garlic until onion is translucent, about 10 minutes. Stir in sage and nutmeg. Transfer the flavorful mixture to a bowl, then mix in chopped mushrooms and sausage. Add reserved soaking water, pumpkin, Gruyere cheese, cream, salt, and pepper.
  • 1. Bring a large pot of salted water to a boil. Add penne and cook for about 10 minutes until al dente. 2. Drain the pasta and stir it into the pumpkin sauce. 3. Transfer the mixture to a pan, sprinkle Parmesan cheese on top, and cover with foil.
  • Bake until bubbly in the preheated oven for approximately 30 minutes.
